Enjoy the simplicity and deliciousness of this One Pot Italian Risoni. This easy-to-make dinner recipe captures the essence of Italian cuisine in just one pot! Each spoonful unveils a symphony of flavors, from the tender risoni to the tangy tomatoes and the savoury antipasto mix.
Ingreadient:
- 2 tbsp olive oil
- 2 medium onions, finely chopped
- 3 cloves garlic, crushed
- 250g punnet medley tomatoes, halved
- 350g risoni
- 2 cups chicken-style stock
- 500g jar tomato pasta sauce
- 1½ cups (260g) antipasto mix (pitted olives, sundried tomatoes, roasted capsicum strips and marinated artichokes), drained
- 125g Perfect Italiano Traditional Grated Parmesan
- ½ cup basil leaves, torn, extra leaves to serve
Direction:
- Heat oil in a large, deep-frying pan over a medium heat. Add the onion and garlic and cook for 4 minutes, or until the onions have softened.
- Stir in tomatoes, risoni, stock and pasta sauce. Bring to the boil. Reduce heat and simmer gently, stirring regularly, for 5 minutes. Stir in antipasto mix. Cook for a further 5 minutes, or until risoni is nearly tender then remove from heat (the risoni will continue cooking upon standing).
- Remove from the heat. Stir in ¾ of the Traditional Grated Parmesan and the basil.
- Serve immediately with remaining Traditional Shaved Parmesan and basil leaves to garnish.
