Easy dairy-free, gluten free lemon dessert made with Vitasoy Soy Milky Lite

Ingreadient:

    • 3/4 cup caster sugar
    • 60g softened dairy-free margarine
    • 4 eggs, separated
    • Zest of 1 lemon
    • 1/3 cup lemon juice
    • 1/2 cup Gluten free Self Raising flour
    • 1 1/2 cups Vitasoy Soy Milky Lite
    • Icing sugar for dusting

Direction:

    1. Preheat fan-forced oven to 170° C/ 150°C (fan forced). Lightly grease a 1.5 litre ovenproof dish
    2. Combine caster sugar, margarine, egg yolks and lemon rind in a bowl and beat with electric beaters on medium speed until creamy
    3. Sift flour into mixture and add lemon juice and Vitasoy Soy Milky Lite. Gently beat until combined. In a separate bowl, beat egg whites until soft peaks form and fold into lemon mixture
    4. Pour mixture into a prepared dish. Stand dish a water bath (a larger baking dish, half filled with water) and bake for 45-50 minutes until set and lightly browned
    5. Remove from oven and dust with icing sugar. Serve warm or cold
