Easy dairy-free, gluten free lemon dessert made with Vitasoy Soy Milky Lite
Ingreadient:
- 3/4 cup caster sugar
- 60g softened dairy-free margarine
- 4 eggs, separated
- Zest of 1 lemon
- 1/3 cup lemon juice
- 1/2 cup Gluten free Self Raising flour
- 1 1/2 cups Vitasoy Soy Milky Lite
- Icing sugar for dusting
Direction:
- Preheat fan-forced oven to 170° C/ 150°C (fan forced). Lightly grease a 1.5 litre ovenproof dish
- Combine caster sugar, margarine, egg yolks and lemon rind in a bowl and beat with electric beaters on medium speed until creamy
- Sift flour into mixture and add lemon juice and Vitasoy Soy Milky Lite. Gently beat until combined. In a separate bowl, beat egg whites until soft peaks form and fold into lemon mixture
- Pour mixture into a prepared dish. Stand dish a water bath (a larger baking dish, half filled with water) and bake for 45-50 minutes until set and lightly browned
- Remove from oven and dust with icing sugar. Serve warm or cold
