Introducing the Lemon and Blueberry Weetbix Slice, a delightful treat. The crunchy base pairs perfectly with zesty lemon icing and juicy blueberries, creating a refreshing and satisfying slice. Ideal for a midday snack or light dessert, it's a deliciously wholesome treat.
Ingreadient:
- 185g Fairy margarine, chopped, extra for greasing
- ⅔ cup caster sugar
- ¼ cup honey
- Grated zest of 1 lemon
- 6 Weetbix, crushed
- 1 cup desiccated coconut
- 1 cup plain flour
- ½ teaspoon baking powder
- 125g punnet blueberries
- 1 cup icing sugar mixture, sifted
- 1 tbsp lemon juice
Direction:
- Preheat oven to 200C/180C fan forced. Grease and line a 28cm x 20cm rectangular slice pan with baking paper on both sides.
- Combine Fairy, sugar and honey in a saucepan over a medium heat until melted.
- Place zest, Weetbix, coconut, sifted flour and baking powder in a large mixing bowl. Stir to combine. Add melted Fairy mixture and stir until combined. Stir in blueberries.
- Press into base of pan and smooth surface with the back of a spoon.
- Bake for 30-35 minutes or until lightly golden and set. Cool completely in pan.
- Combine icing sugar and juice in a bowl and stir until smooth and runny.
- Lift slice out of pan. Drizzle the icing over the top off the end of a spoon. Allow to set. Cut into bars or squares to serve.
