These fantastic avocado banana muffins are the perfect afternoon snack and great to add to kids lunch boxes. These super easy muffins are delicious and quick to whip up.
Ingreadient:
- 2 cups self-raising flour
- 1/2 teaspoon bicarbonate of soda
- 1 teaspoon baking powder
- 1/3 cup buttermilk
- 2 eggs
- 1/4 cup honey
- 1 teaspoon vanilla extract
- 2 bananas, mashed
- 1 avocado, mashed
- 1/2 punnet blueberries
Direction:
- Preheat oven to 180°C. Line 12 muffin moulds with paper cases
- Combine flours, bicarb soda and baking powder in a bowl
- Whisk milk, eggs and honey in a jug. Add to flour with banana and avocado. Stir until just combined
- Spoon mixture into prepared cases topping with blueberries; pressing into mix lightly. Bake for 20 minutes or until cooked through when tested in the centre with a skewer. Transfer to a wire rack to cool. Serve
