These easy avocado, mango and chilli prawn cups are a delicious entree or appetiser to enjoy on Christmas Day or for any dining occasion during the season when mangoes and seafood are at their best.
Ingreadient:
- 600g large cooked and peeled prawns
- 1/3 cup aioli
- 2 tsp lime zest
- 1 chilli, seed removed and finely chopped (plus extra)
- 1 tsp chives, finely chopped (plus extra)
- 1/2 small red onion, finely diced
- 1 small Lebanese cucumber, small dice
- 1/2 medium avocado, small dice
- 1/2 small mango, diced
- 2 baby cos lettuce, leaves removed
Direction:
- Chop prawns into bit 1cm pieces and set aside
- Combine all ingredients into a bowl and mix until combined. Add prawn pieces and toss. Season with salt and pepper to taste
- Top individual cob lettuce leaves with prawn mix and garnish with extra chilli and chives
- Serve immediately
